Quick Mixes:  Waffle Mix 

 

Makes 10 cups of mix

                  Use 1 half-gallon mason jar and 1 pint mason jar

or 3 quart jars.   For vacuum sealed jars:  Line jars with a bread bag or zip log bag before filling with mix.  Twist the bag closed before vacuum sealing. 

 

 

Waffle Mix:                                        

3 ½ cups wheat flour             

3 ¼ cups white flour  

¾ cup sugar   

1 ¾ cup powdered buttermilk

1 TB baking soda

2 TB baking powder

1 TB salt

 

Mix waffle mix together and store in fridge in a 10-cup container. Or, vacuum seal mix in a mason jar and store on the shelf.   Use within 6 months.

 

Small batch (3 waffles)

1 cup waffle mix

¾ cup water

1 egg, separated

4 tsp oil

 

Large batch (8-9 waffles)

3 cups waffle mix

2 ¼ cups water

3 eggs, separated

¼ cup oil

 

For waffles:  Preheat waffle iron.  Combine mix, water, egg yolk and oil.  Mix until well blended.  Beat egg white until stiff.  Fold egg white into mixture.  Bake in waffle iron.
